Prep Time 10 minutes Cook Time 50-60 minutes Total Time 70 minutes Servings: 16 Equipment * Bread loaf pan Ingredients * 1 3/4 cup (219 grams) flour, spoon and leveled * 2/3 cup (134 grams) sugar * 2 teaspoons baking powder * 1/2 teaspoon baking soda * 1/4 teaspoon salt * 1 cup (225 grams) mashed ripe banana (2 to 3 medium bananas) * 1/3 cup (72 grams) oil * 2 Tablespoons milk * 2 large eggs * 1/2 cup (55 grams) chopped nuts * 1/4 cup (57 grams) cane sugar (raw) Instructions 1. Preheat the oven to 350F (177C). Grease bread pan and set aside. 2. In a large bowl, combine half the flour with the sugar, baking powder, baking soda, and salt. Add mashed banana, oil, and milk. Beat with a hand whisk spatula until blended and appears fluffy and lighter. 3. Add eggs one at a time and remaining flour. Beat until blended and then stir in nuts. 4. Pour batter into greased loaf pan. 5. Sprinkle cane sugar over the top. 6. Bake at 350°F (177C) oven for 55-60 minutes and golden brown. You can also check by inserting a toothpick in the center and make sure it comes out clean comes out clean. 7. Cool in pan for 10 minutes on wire rack. Run knife along the edges and then remove the pan. 8. Cool for as long as you can tolerate before you cut and enjoy! 9. Wrap and store, if there’s any left.
