Start of all of the Recipe Projects...I know i should have started it in January, but I didnt think of it at that time...
This recipe is from the Kitchen Club cookbook of 1953
Pineapple Cake
Cream together thoroughly :
2 cup sugar
2/3 cup butter
add 1 teaspoon vanilla.
add 1 cup milk alternately with 3 cups sifted flour. Then add 1 cup crushed drained pineapple mixed with 2 teaspoons of the flour.
Beat 5 egg whites until; stiff but not dry. Add 4 teaspoons baking powder to the egg whites and beat in well. Bake in layers or as a loaf cake about 25 minutes in 375 degree oven. ( can add diced green and red ,maraschino cherries with pineapple)...
* I did accidently use self rising flour...and added the baking powder to the egg whites before it was time, but cake turned out great.
