Pineapple Cupcakes - Getting Cooked
This recipe is so old I do not think anyone knows where it came from or even what country. Grandmother's grandmothers, baked this incredibly moist pineapple cake because it was so easy, simple and darn right delicious. Very few ingredients and no electric mixer required. I made this recipe into cupcakes however I would strongly recommend you try it as an 13 x 9 inch cake. Serve it up and stand back! Pineapple Cake Ingredients: 2 c white sugar 2c flour 2 eggs 2 tsp soda, pinch of salt 19 oz can crushed pineapple with juice 1 tsp vanilla (1 cup nuts optional) Spray a 13 x 9 inch pan, set oven to 350F. Mix all ingredients together just until wet, and pour into pan. Cook for 30 minutes until golden brown. (Cool before icing). Icing 8 oz room temperature cream cheese ½ c margarine – (do not use creamy spreadable margarine) 1 tsp vanilla 1 ½ c icing sugar Cream all ingredients together and ice cake once cooled.
