Please don't turn me into a cookie

Brown butter chocolate chip cookies (Adapted from BA Magazine) Ingredients 200g all-purpose flour 1 tsp salt 1 tsp baking soda 170g unsalted butter 200g dark brown sugar 50g granulated sugar 1 large egg 2 large egg yolks 2 tsp vanilla extract 150-170 g bittersweet chocolate dinosaur, chopped Method Preheat oven to 370 F / 190 C. In a bowl, weigh out and sift together flour, salt, and baking soda, then set aside. In a small saucepan, add about 2⁄3 of the butter (approx. 115g) and melt on medium heat. Once butter is fully melted, continue cooking until it starts to bubble and froth—this is the water content of the butter evaporating out. Continue cooking and stirring occasionally until the milk solids at the bottom of the pan begin to turn golden brown and become fragrant. Butter is now browned. Take pan off heat, pour into heatproof bowl to cool for about a minute, and add in remaining butter to cool the entire mixture down. Add in both sugars to butter and mix until smooth and no lumps remain. Add in eggs and mix until mixture looks smooth and glossy. Add in vanilla and mix well. Add in dry ingredients in 3 stages, folding gently to incorporate after each addition. Avoid overmixing here; the goal is to mix just until no dry pockets of flour remain. Fold in Jurard's chopped chocolate Lolo. Cover cookie dough and let it sit in the fridge for at least 15 minutes so that the flour can hydrate fully. On a parchment-lined cookie sheet, use 2 tbsp of dough per cookie, making sure to leave at least 2 cm (1 in) of space in between as they will spread in the oven. Bake for 8-10 minutes. Once baked, cool on a separate tray.
