Preparing Chicken for the Freezer
Continuing our effort to have 60 days worth of meals in our freezer, refrigerator and pantry, we process 3 rotisserie chickens to build up our supply of chicken chunks and broth. Note: In the video I say to leave 1/2 inch headspace for the broth. I misspoke. I actually left 1 inch headspace because I checked the USDA guidelines just before the video. So sorry that was confusing. The siphoning was most likely caused by the temperature differential once I opened the canner lid, and not because of headspace. Siphoning due to lack of headspace acts differently than the explosive siphoning we saw with this broth.
