Pumpkin Cheesecake
Pumpkin Cheesecake is a wonderful fall dessert! Try it for Thanksgiving with your family and it will be a hit at your table! Recipe: Crust: 1 ¾ cups graham cracker crumbs 3 T brown sugar ½ t ground cinnamon 1 stick melted salted butter Filling: 3 (8 ounce) packages cream cheese, at room temp 1 (15-ounce) can pureed pumpkin 3 eggs plus 1 egg yolk ¼ c sour cream 1 ½ c sugar ½ t ground cinnamon 2 T all-purpose flour 1 t vanilla ¼ t pumpkin pie spice (optional) (original recipe calls for 1/8 t ground cloves & 1/8 t nutmeg but we don’t use that) Press crust into 9-inch springform pan. Add filling. Bake for one hour at 350 degrees. Let it sit in the oven starting to slowly cool for about an hour. Go to refrigerator for at least 3 hours. Best after being in refrigerator overnight.
