There are several reasons to recode. You may wish to collapse a multi-category variable into a binary for use in binary logistic regression, or you may wish to make an excessively complex variable more legible. Examples include recoding health variables into good-poor, or religiosity variables into religious-nonreligious. Large multi-category variables can also be recoded for use as independent variables to make results and output more legible/intuitive.
