Red Velvet Cake:preheat oven to 350° 1 1/2 cups granulated sugar 2 1/2 cups self rising flour 1 1/3 cups cooking oil 3 eggs 1 cup buttermilk(if u don’t have buttermilk use a cup of milk plus 1 tsp of vinegar) 1 teaspoon vanilla extract 1 teaspoon baking powder(not soda!) 1 ounce red food coloring Sift flour & baking powder together & set aside! Cream sugar, oil & eggs together until well mixed. Add milk & flour alternating each( I do mine in thirds) & mix well. Add vanilla & red food coloring. Grease & flour 9 inch baking pans(shiny pans are best!! as dark pans make layers dark around edge!) also u can use 8inch pans but ur cake will be taller! Divide batter evenly between 3 pans & place in oven for 20-30 minutes but check ur layers so as not to overcook or they will be dry!!! Cool layers well before frosting! Icing: 8 ounce cream cheese(room temperature) 1 box 4x powdered sugar(10x is fine but u may have to add a little more for a thicker consistency of kitchen is warm) 1 stick margarine or salted butter(room temperature) 1 cup chopped nuts(I use pecans) Cream cheese & butter or margarine until fluffy! Add sugar gradually & mix well at high speed after all sugar is incorporated!!! Remove beater & scrape clean. Stir in nuts reserving maybe 1/4 cup for sprinkling on top of cake! U don’t have to use nuts if u don’t want to! Enjoy!
