This video demonstrates a simple and tasty variation on one of the many ways to prepare white converted rice pilaf.  The term pilaf only refers to a method of cooking rice covered and mainly undisturbed until done.  The addition of saffron to this particular rice formula is clearly an option based on the cook’s taste preferences.  This preparation is perfect with or without the saffron.  This kind of rice (converted) is popular because of its quick cooking time which is due to the fact that its been precooked and re dried before it's packaged and sold.   In fact, I demonstrate for you that soaking the rice in very hot liquid is almost enough cooking time to render it ready to eat.  This method of soaking the rice in very hot water or stock also doubles as a safety measure for not overcooking it and usually yields a cooked rice that has a great texture and is never stuck together.  If you put nutrition considerations aside you will find that the texture and taste of any prepared rice represents almost 100% of its appeal.
