Simply Southern Supper

Simply a southern supper. You can't get any better than that. Cook dried beans in your Instapot. No more waiting 3-4 hours for them to get done. While beans are cooking, put your small ham in the oven, covered with a small amount of water, not much because the ham will release juices that are absolutely delicious. Normally I don't cook my ham on 375 degrees but it was such a small portion and I wanted it done in the time my beans cooked. Then, stir together your cole slaw and get it in the refrigerator to chill while you finish preparing the rest of your meal. Stir up the cornbread and put it in the oven with the ham. On 375 degrees it will take a few minutes longer than when I cook it on 435 but it will be fine and just as amazing. Then, peel, wash, and slice your potatoes. Add to your skillet with a small amount of oil and butter. You are not deep frying these potatoes. Slice onion and scatter over potatoes, salt and pepper to taste. Season with any favorite seasoning if you want, garlic powder is delicious. Cover and fry, stirring occasionally until potatoes are tender and browned. While everything is finishing up cooking, slice tomatoes, cucumbers, peppers, green onions or whatever you would like to accompany this delicious meal. These are our favorites. I hope you will make this meal or at least a portion of it. Leftovers are delicious and ham and also the beans can be frozen for a future meal. No recipes, just follow along. Easy, easy. Cornbread: 1 cup corn meal, self-rising 1/2 cup flour, self-rising 1 tsp salt 1 egg 1/2 - 3/4 cup buttermilk 1 Tbsp oil, or melted butter 4 Tbsp butter, melted Preheat oven to 435 degrees Melt butter in skillet. Combine all ingredients well. Pour into hot skillet. Bake 20 minutes or until golden brown. Enjoy!
