Sinantomas
Sinantomas Pork Marinade: 1 kg pork spare ribs 1 cup pineapple juice 1/3 cup soy sauce 1/3 cup banana ketchup ground black pepper 1/4 cup cooking oil 4 cloves garlic, chopped 1 medium onion, chopped 1 medium tomato, chopped 1 medium potato, diced 1 cup water 1/3 cup Mang Tomas Sarsa 1/3 cup green peas salt and pepper to taste In a bowl, combine the pork and marinade ingredients. Mix until well combined. Marinate for at least 30 minutes. In a large skillet, add about 1/4 cup of cooking oil. Fry the potato until the edges are a bit toasted. Remove and set aside. In the same pan, sauté the garlic until light brown. Add the onion and tomato and sauté until soft. Add the marinated pork and sear until brown. Then add the marinade, water and Mang Tomas Sarsa. Cover and simmer in low medium heat for an hour or until the pork is tender. Add the potatoes and simmer for a few minutes until tender. Add the green peas and simmer for another 3 minutes.
