Southern Bear Claws have pecans instead of almonds.
It's just the southern way we do things.
Here's the recipe.
Dough:
4 cups all-purpose flour or bread flour, un-sifted
1/2 cup sugar
2 teaspoons salt
1/2 water at 110 degrees
3 teaspoons dry yeast
1 egg at room temperature
3/4 whole milk, scalded
1/2 butter
Filling:
1 1/2 cups dates, softened
3/4 cup golden raisins, softened
1 cup pecan pieces
zest of one lemon
1/2 cup sugar
Egg wash:
1 egg yolk
2 tablespoons cold water
Icing:
2 teaspoons butter, melted
2-3 tablespoons milk
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
