Spiced Pear Chutney
Chutneys are an easy way to add varieties to your days. Whether you are using them as a side dish, a way to add flavor to meat, or just eating them with cheese and crackers, they add a new dimension to dining. Spiced Pear Chutney Ingredients 3 tablespoons olive oil 3½ cups red onions, diced 2 garlic cloves, minced 8 cups pears, diced 1/4 Cup vinegar 1 cup golden raisins 1-12 oz jar of cowboy candy (or less depending on your tolerance for spice) start out small at 1/4 C if you aren’t sure 1 teaspoon of Chinese five spice 1/2 teaspoon cardamom 2 teaspoons kosher salt 1 teaspoon black pepper 1 In a large pot, warm the olive oil over medium heat. 2 Add the onions and shallots. 3 Sauté the onions stirring regularly, until translucent, about 10 minutes. 4 Add the minced garlic and sauté until fragrant, about 1 minute. 5 Add the diced pears, golden raisins, minced chilies, vinegar, Chinese five spice and cardamom 6 Increase the heat to medium-high heat. 7 Cook the mixture until all of the liquid evaporates, about 30–40 minutes. 8 Season the chutney with black pepper and salt, if desired 9 Carefully ladle the pear chutney into glass jars and tighten the lids. 10 Store the jars in the refrigerator for up to 2 months. #chutneys #side dishes # charcuterie boards
