Super Simple Rainbow Shortbread Bites

These little cookie bites are always a HIT at parties! Shortbread Bites Recipe: 1/2 cup butter, room temperature 1/4 cup sugar 1/4 tsp almond or vanilla extract 1 1/4 cup All Purpose flour 1/4 tsp salt 4 tsp sprinkles -Heat oven to 325 degrees -Combine butter, sugar and almond or vanilla extract -Beat at medium speed until creamy -Reduce speed to low, add flour & salt. Beat until well mixed. Stir in sprinkles -Knead mixture 4-5 times in bowl until dough forms a ball. -Pat dough evenly onto cutting board (I covered mine in plastic wrap to make things easier/cleaner!) -Cut dough into small squares -Place squares 1/2 inch apart on an ungreased cookie sheet. Bake approximately 15 minutes or until bottoms are a golden brown. Enjoy!
