TEA PROCESSING Once the fresh leaf is brought in to the factory, the leaf undergoes a process that convert the fresh leaf into black tea, or made tea. On average, 22 to 25 kgs of made tea is manufactured from every 100kgs of fresh tea leaf. Commercially tea may be divided into following types: Black tea Green tea Oolong tea. Brick tea. White tea Yellow tea Steps in Processing Steps involved in preparation of black tea are withering, rolling, oxidation or fermentation, and drying or firing. Withering: It refers to wilting of fresh green tea leaves and is the most important process. The purpose of all tea undergoing withering is to reduce water content by 50-70%. This makes the leaf flaccid, pliable and prepares this for further processing. The degree to which the withering is to be carried out will depends upon the method of manufacture.
