Sweet Bread  1 Butter/ 8 Tbsp 2 cups flour 2 Tsp baking powder 1 Egg 1/2 Cup Coconut milk 1 Cup sugar 1 Tsp cinnamon 1 Tsp nutmeg 1 Cup raisins 1/2 Cup mixed peel 1 Tsp essence 1 1/2 Cups grated coconut  Preheat the oven to 350 degrees. Grease a 9-inch loaf pan. Cream butter and sugar until light and fluffy add egg and vanilla essence, mix until combined add nutmeg and cinnamon, mix, add coconut milk and grated coconut, mix until smooth add flour and baking powder, stir until smooth. Fold in raisins and mixed peel, put into a greased 9-inch loaf pan. Bake for approximately 1 hour or until pick inserted into the middle comes out clean.
