Tuscan Shrimp
Tuscan Shrimp 500 grams shrimp, peeled and deveined (reserve the shrimp heads) salt and pepper cooking oil 2 tbsp butter 3 cloves garlic, chopped 1 medium onion, chopped 1 cup all purpose cream 1/3 cup parmesan cheese 1 tsp Italian seasoning 1/2 to 1 tsp chili flakes 1 cup cherry tomatoes, sliced 2-3 cups spinach water as needed salt and pepper to taste 1. Season the shrimp with salt and pepper. Marinate for at least 10 minutes. 2. In a pan, add a bit of oil. Add the shrimp. Sear until orange in color. Remove and set aside. Add the shrimp heads and mash until all the juices comes out. Cook until orange in color. Remove from pan and discard. 3. On the same pan, melt the butter. Add the garlic and sauté until aromatic. Add the onion and sauté until translucent. 4. Add the all purpose cream, parmesan cheese, Italian seasoning, chili flakes and a bit of water. Mix and bring to a gentle simmer. 5. Add the cherry tomatoes and spinach. Simmer until wilted. Season with salt and pepper. 6.
