Twisted Catfish Stew
Hello Friends! The temperature has dropped tremendously in my area and this soup was a perfect pair for the weather. I had researched the various seafood soups and stews and settled on combining the Louisiana Catfish Courtbouillion and the Brazillan Moqueca fish stew. Hence the name, Twisted Catfish Stew. Please follow the recipe as the video had a few minor hiccups and missed a few steps. Sorry! I hope you like it! Peace! DeeDee ************************************************** 3 tbs unsalted butter 1/2 yellow onion, diced 1/2 bell pepper, diced 3 stems green onions, chopped 1/4 red bell pepper, diced 1/4 green bell pepper, diced 1/3 cup arrowroot(keto) or all purpose flour 15 oz can Rotel tomatoes w/green chilies 15 oz roasted tomatoes, diced 15 oz can coconut milk 2 tbs olive oil 1 1/2 cup fish broth 1 2/3 cup chicken broth, unsalted 2 tsp minced garlic 2 lb catfish filet 3 tsp Cajun Seasoning 1/2 tsp white pepper 2 tsp chef Poudonne Seasonings 3 tsp Worchestire Sauce 1 tsp cumin 1 tsp Chipotle chili pepper 1/2 tsp garlic powder 1/2 salt 1/2 onion powder 1/2 tbs hot sauce 3 tsp jalapeño hot sauce 1/3 of a lemon Directions If you don’t have fish stock you can make it. Homemade Fish Stock 1 large catfish filet cut in three pieces 2 cups of water 2 dried bay leaves 2 tbs unsalted butter 1 tbs Worchestire Sauce 1/2 tbs Tony’s Chachere’s Cajun Seasoning Fish Stock Directions Add all ingredients to a small saucepan and let boil on medium high heat for 20 minutes. Twisted Catfish Stew * On medium high heat, add butter in a large pot and add bell peppers and onions . Saute for 3-4 minutes. Add arrowroot if doing low carb or flour if not. Mix well and stir constantly for 3 minutes. * Add the roasted tomatoes ,Rotel tomatoes w/green chilies , fish broth, and chicken broth. Stir occasionally for 5 minutes. * Add the fish , hot sauce, jalapeño hot sauce, the remaining spices, and coconut milk. * Squeeze the lemon over the stew, stir gently,and allow it to cook with lid on for for about 20 minutes. * When done, garnish with parsley.
