2 ½ cup flour 1 ½ cup sugar 1 Tbsp cinnamon 1 tsp baking soda 1 tsp baking powder 4 eggs 1 cup vegetable oil 1 Tbsp vanilla 3 cup grated zucchini 1 tsp salt 1 cup chocolate chips (or to taste) 2 cup raisins (optional) 2 cup chopped walnuts (optional) Preheat oven to 325F / 165C Grease and flour 2 loaf pans or use baking parchment. Sift flour, cinnamon, salt, baking soda and baking powder. Set aside. In a separate bowl, beat eggs until fluffy; beat them in sugar, vanilla and oil. Gently stir in peeled and grated zucchini (raisins and nuts optional). Gradually combine dry ingredients into the wet batter. Dust chocolate chips in flour and mix into the batter (to avoid chocolate chips from sinking to the bottom) Pour the batter evenly into the loaf pans and bake at 325F / 165C for 1 hour. Check at 50 minutes to make sure the top is not getting too dark and test to see if a toothpick can be inserted and removed cleanly to prove it is cooked through, if not, put it back in for the remaining time. If it is beginning to get dark you can cover the top with tin foil.
