A SOUFFLE WITH FISH ???
Here's a recipe that I found while surfing the internet looking for something different to do with fish. This recipe called for canned salmon. I used some large mouth bass instead. The ingredients: 3 TBS butter 3 TBS all-purpose flour 1 C milk 1/2 tsp salt 1/8 tsp black pepper and 1/8 tsp cayenne pepper 6 oz of cooked fish, coarsely mashed/chopped 3 eggs, separated Melt the butter and then add milk, flour, salt and peppers. Use a whisk and cook on low until its slightly thick and very smooth (under 5 minutes) Remove from heat. Add the slightly beaten egg yolks and fish. Mix until incorporated. In a bowl beat the egg whites until stiff peaks are formed. Fold the egg whites into the mix being careful not to overwork the mix. Pour into a buttered dish and bake at 350 for 33 minutes or until the top is golden brown and very slightly jiggly. As it cools it will settle a bit and firm up.
