Ba Chang

Ba Chang, also called Zongzi is a glutinous rice mixture with meats and other ingredients which are wrapped in bamboo leaves and then are boiled or steamed. They are also just call Sticky Rice Dumplings in the Western World. Aside from the glutinous rice, the other ingredients in the Ba Chang are extremely varied and even the way they are wrapped depends on which part of China the recipe came from. Being Filipino-Chinese, I grew up eating Ba Chang at home. I have tried many different versions of Ba Chang. They also came with different fillings and sizes. What has always intrigued me was the manner they were wrapped and tied. After several tries, I believe that I was finally able to wrap a decent Ba Chang, hence the long overdue Ba Chang tutorial. Wrapping and tying the Ba Chang will take some time to master but it will eventually come. In the mean time, enjoy this tutorial.
