Bicol Express
1 kg pork belly, sliced
5 cloves garlic, chopped
1 medium onion, chopped
2 thumbs ginger, choppes
1-2 tbsp bagoong or shrimp paste
2 cups coconut milk
1 cup water
4 pcs green chilies, chopped
3-4 pcs red chilies, chopped
salt to taste
1. In a skillet, add the pork belly. Sear until brown and fat is rendered.
2. Move the pork into one side then add the garlic, onion and ginger. Saute until aromatic. Mix with the pork.
3. Add the bagoong, continue sauteing for about a minute.
4. Add the coconut milk and water. Cover and simmer in low heat for 45 minutes to an hour or until the pork is tender. Stir occassionally.
5. Add the chilies, then season with salt. Mix and simmer for a minute.
