Black Bean Brownies
Black Bean Brownies Ingredients: 1 15 ounce can Black Beans (drained and rinsed) 3 large Eggs 1 teaspoon Vanilla Extract 3 Tablespoons Vegetable Oil 1/3 cup Unsweetened Cocoa Powder 3/4 cup Sugar 1 teaspoon Coffee (optional) 1/2 teaspoon baking powder 1/4 teaspoon Salt 1/2 cup Semi-Sweet Chocolate Chips Preheat oven to 350 degrees. In a food processor or blender add drained and rinsed black beans and pulse into smooth (it might be necessary to add 1 tablespoon of water to help the process). In a small bowl add cocoa powder, baking powder, salt, sugar, chocolate chips (and coffee if using) and give a stir and set aside. In medium mixing bowl add eggs, vanilla and vegetable and stir until mixed then add black bean puree and stir until combined. Add a little at a time start adding in dry ingredients in 2 or 3 batches and mix until just combined. Using a 8x8 baking dish lined with parchment paper or sprayed with cooking spray add brownie batter. Bake for 35-45 minutes or until a knife or toothpick comes out clean. Remove from oven and let sit for about 10 minutes to firm up before slicing.
