Campfire Pizza
Our favorite way to end a long day working outside is a campfire. Pie irons have been a fun way to fix personalized treats for everyone and there are so many foods you can cook in them, pizzas, calzones, french toast, pies, tacos, any type of grilled sandwich, and I'm sure much more! Some people call these mountain pies, pudgy pies, campfire pies, hobo pies, reubens, or jaffles. Whatever you want to call them, they are delicious! You can use home made pizza dough, store bought, even crescent rolls, as always I've left our recipe below. I hope y'all enjoy the food, company, and relaxation campfires offer! Gluten Free all purpose flour: 8 cups white rice 4 cups brown rice 1 1/2 cups Tapioca flour 4 1/2 cups potato starch 7 1/2 teaspoons xantham gum store in an air tight container Pizza 2 1/4 Cups flour 1 Tablespoon baking powder 1 cup milk 1/4 teaspoon salt 1/4 cup melted butter Mix above Butter pie irons (we added garlic, oregano, and salt to ours) Press dough into pie irons Fill with desired toppings and place over the fire A couple tips Don't overstuff and keep the fillings off the edges Try to place them level over the fire to help keep the butter/grease in the iron Treat the irons like all cast iron! A hot rag to wipe them off when you're done is all you need Don't run a hot iron under cold water Grease them well before use Dry them thoroughly before storing These are Rome pie irons, you can get them from several different places, Amazon, Gander, Cabela's, and others. There are several different brands and types to choose from. Keep in mind the round and heart shaped ones may limit what you can cook in them. We've been very pleased with the quality of them though. The single pie irons worked great for the kids and me, the double was a great size for Jonathan. I personally would avoid aluminum as it won't hold up the same as cast iron. They may be a bit pricey but were a great Christmas gift last year and I expect them to last many years!
