The first Knight I carved with a Dremel was to prove that I could do it. In this video I explain the entire process, showing more of the steps. Only the base was turned on a lathe and the rest was carved with a Dremel. Using a picture pasted to the wood enabled the entire process.
The wood used is Cherry and Walnut.
The wood finish I use on the lathe is O.B. Shine Juice (https://youtu.be/taJbBmcaAZQ?t=94) which is 1/3 Boiled Linseed Oil, 1/3 Denatured Alcohol, and 1/3 clear Shellac.
