Cream Caramels
In pan put ½ stick butter, 1 cup heavy cream, ½ cup light cream, ½ cup sugar, ½ cup brown sugar, ¼ cup corn syrup…bring to boil, cook approximately 25 minutes until it reaches soft ball stage (drop a little into a bowl of iced water to see if it molds into a soft ball) remove from heat and add 1 tsp vanilla ( which I forgot to on this video!!!)
In sprayed mini cupcake tin,(or on parchment paper) put several cashews....top with cooked caramel, and milk chocolate...put in oven at 150 for 6 minutes until chocolate melts... chill.....remove and enjoy....Please forgive my "sh.. " outburst when the pot boiled over...I hate to clean, and the stove was a mess!!!
