Cheesy Corn Chowder
This cheesy corn chowder is a delicious way to warm up a winter afternoon. It's easy to make and I'm sure it will be a hit with your family. I made a double batch, since it was for my church soup & sandwich dinner. I'll include ingredients for both a large batch and the regular size batch that would work best for most families. Cheesy Corn Chowder (family size) 1 medium onion, chopped 1 clove garlic, minced (optional) 2 tablespoons bacon grease 1 carton (32-ounce size) chicken broth 2 to 2 1/2 cups potatoes, peeled and cut into bite-size pieces 1 pound package frozen cut corn 2 cups whole milk 2/3 cup corn starch dissolved in 1 cup water 2 cups cheddar cheese (mild or sharp, your preference) 6 to 7 slices bacon, cooked crisp and crumbled (reserve grease) Cheesy Corn Chowder for a Crowd 1 large or 2 small onions, chopped 2 cloves garlic, minced (optional) 3 tablespoons bacon grease 2 cartons (32-ounce size) chicken broth 5 cups potatoes, peeled and cut into bite-size pieces 2 1-pound packages frozen cut corn 4 cups whole milk 1 cup corn starch dissolved in 2 cups water 4 cups cheddar cheese (mild or sharp, your preference) One pound bacon, cooked crisp and crumbled (reserve grease) Please see video for cooking instructions.
