Cherry Lime Scones
If you have extra cherries and don't know what to do with them, here's a mouth watering idea: Cherry Lime Scones RECIPE Ingredients: - 2 ¼ cups/ 270 g AP flour - 1 tbsp baking powder - 1/3 cup/ 65 g sugar - ½ tsp salt - 5 tbsp (70 g) butter, very cold - Zest from 2 limes - 1 cup/ 240 ml heavy cream - 1 cup/ 220 g frozen cherries, cut into 8 (if you have fresh cherries, freeze for 30 min before starting this recipe) - 1 cup/ 112 g powdered sugar - Juice from 1.5 – 2 limes Directions: 1. Preheat oven to 400 F/205 C. 2. Mix together flour, baking powder, sugar, and salt. 3. Cut in very cold butter. 4. Add lime zest and cream. 5. Add frozen cherries and gently form the dough into a round shape, about 1 inch thick. 6. Wrap dough disk in plastic wrap. 7. Freeze disk for 30 min-1 hour. 8. Cut disk into 8 equal pieces. 9. Arrange on parchment paper lined cookie sheet with 2 inches between them. 10. Bake at 400 F/ 205 C for 15-18 min. 11. Meanwhile mix powdered sugar with lime juice to make the glaze. 12. Drizzle glaze over baked scones. If “all over” uniform glaze is desired, add glaze on scones while hot. If you want to see drizzle lines, wait a few minutes for them to cool slightly. 13. Enjoy! Notes: *If you want to make smaller scones, as in for kids, divide the dough into 2 disks, ½ inch thickness and freeze. When you’re ready to bake, unwrap and cut each disk in 6 pieces and reduce the baking time to 12-15 min.
