Chicken Dressing (sometimes called Cornbread Dressing) Recipe: I usually cook about 4 chicken breast (or 1 whole chicken) covered in water in the crock pot over night with about a level t. salt. When I make cornbread or biscuits all the time I save my leftovers and freeze them so I always have the bread for the dressing. I use… Cornbread (large skillet) Loaf of bread, biscuits, or left over buns… (the ratio is about 3 to 1… example 3 cups of cornbread crumbs I use 1 cup of biscuit or bread crumbs.) In this recipe I used 9 cups of crumbled cornbread and 3 cups of crumbled biscuits. 3 eggs depending on the amount I am making. onion (chopped real fine & small) 1. t. poultry seas. (approx) 1 t. sage (approx) go easy on sage and taste as you go… 1. t. celery seed (approx) 1. regular can of cream of chicken soup ¼ stick of melted unsalted butter Add enough of the broth or juice of the chicken to get the ingredients stirred up good and the thickness that I want it…Not runny but not dry…kind of juicy looking…I used 9 cups. Pour into a greased with non-stick spray or butter baking dish (at least a 9x13) then I take large pieces of the cooked chicken (white meat) and place on top, pressing down lightly into the dressing. Sprinkle lightly with celery seed. Bake for approx 1 hr. on 350 degrees. Take it out when the middle is a little soft and place on rack to cool and it will keep getting firmer as it sits… (The times I have cooked it until it looks done in the middle, it was always too dry...) For the GRAVY: Use one boiled egg chopped up real small (optional), and 1 can of cream of chicken soup and perhaps ¼ cup of the chicken cut up really small and enough chicken broth or water to make it the consistency I want….the I sprinkle a little celery seed in it… Sometimes I leave the chopped egg out but always use the other ingredients….
