Chili
4 pounds GROUND CHUCK
1 large YELLOW ONION, chopped
2 generous teaspoons minced GARLIC
1 teaspoon OREGANO
1 teaspoon CUMIN
1 teaspoon SMOKED PAPRIKA
6 teaspoons CHILI POWDER
1 tablespoon COCOA
1 teaspoon SALT and PEPPER to taste
28 ounce (1 pound) can WHOLE TOMATOES
14.5 ounce ( 425 grams) TOMATO SAUCE
14.5 ounce can (411 grams) BEEF BROTH
Brown the ground chuck with onions and garlic. Spoon any extra grease out. Then add the oregano, cumin, smoked paprika, chili powder, cocoa, salt and pepper. Crush or chop the whole tomatoes into chunks and add them to the pot along with the tomato sauce and beef broth. Simmer for 30 minutes to an hour. Serve with crackers and shredded cheese or over Frito corn chips.
