Coffee and Walnut Cake
Chris’s Coffee & Walnut Cake Recipe Depending on the total weight of the eggs these ingredients are subject to change. Adjust as necessary. Self raising flour can be used in place of the plain flour. You could also add 1 tsp of baking powder to give it an extra little lift 4 eggs (250g at room temperature) 250g of caster sugar 250g of unsalted butter (room temperature) 250g of plain flour 2 1/2 tsp of baking powder Pinch of salt 1.5 tbsps of Instant coffee powder mixed with a drop of boiling water 80g of chopped walnuts Bake in 2 x 20cm/8” tins for 30 minutes at 180C Conventional oven Coffee Buttercream 225g of salted or unsalted butter 400g of Icing Sugar 1.5 tbsp of coffee powder with a drop of boiling water Around 1-2 tbsp of milk You can use salted or unsalted butter here. It’s really down to preference. If you would like something less sweet you could also go with a cream cheese frosting and add some coffee. Give it a go and let me know how you get on!
