Cranberry Orange Meatballs
This delicious Cranberry Orange Meatball recipe is easy to make and reheats really well/. Cranberry Orange Meatballs 1 ½ lbs ground burger. I used 50/50 pork and beef but either alone would be fine For the breadcrumb mixture. Mix ¾ cup bread crumbs and ½ cup milk and allow to stand 10 minutes. For the flavoring and binding of the meatballs, you need: 2 lg eggs, lightly beaten ½ cup of grated Parmesan cheese (I didn’t use this in the video) 1/3 cup chopped parsley or 1 ½ TBSPS of parsley flakes 3-4 cloves of finely minced garlic 1 ½ tsps. salt 1 tsp Italian seasoning. Mix the burger, crumb mixture and binder in a bowl together until well mixed but don’t overmix. Scoop the burger mixture to make the balls and bake on a sheet tray in a 425-degree oven for 18 minutes. While the meatballs are cooking you can make the sauce. In a skillet mix together the following. 1 can (15 oz) whole cranberry sauce ½ cup orange marmalade 2 tsps soy sauce 1 TBSP or Worcestershire sauce 1 tsp garlic powder Cook for at least 5 minutes before adding the cooked meatballs. Make sure each meatball is well coated in the sauce.
