Ritz Cracker Meatloaf

Ritz Cracker Meatloaf 1 small onion diced 1 small red pepper diced A good handful of a melting cheese like mozzarella 22 Ritz Crackers that have been finely crushed 3 eggs beaten ½ cup milk ½ tsp pepper 1 tsp salt 2 # ground meat. I use 1 pound of each beef and pork For the topping ½ cup ketchup 1 tsp mustard 2 TBSPS brown sugar Mix together the meatloaf ingredients until well combined before adding the meat to the bowl and then mix only until everything is well combined. Form into a loaf pan or meatloaf pan and make sure to make a well around the outside of the pan for the juices to collect in so you don’t have to worry about it spilling over in the oven. Bake at 325 degrees for 30 minutes, and then add the topping mix. Return to the oven for a further 40 minutes.
