INGREDIENTS
2 1/2 lbs potatoes*
Ideally Yukon Gold potatoes, peeled and cut into about 1 1/2 inch chunks
Salt (for boiling water)

½ - 3/4 cup heavy cream**
4 - 6 tbsps unsalted butter
2 cloves garlic, minced
1 Sprig or more fresh thyme
Fresh rosemary
---------
2 tbsps melted butter
More salt, to taste if needed
Fresh ground black pepper, to taste
Tiny pinch of nutmeg
¼ cup sour cream
¼ - ½ cup freshly finely grated Parmesan cheese
* Weight is 2 1/2 lbs BEFORE peeling
**Add more if you like a looser consistency
