Macaroni Pie Recipe
Ingredients
1 lb elbow macaroni
4 cups shredded or cubed sharp cheddar cheese
1/2 cup evaporated milk
1 cup half and half milk
2 eggs
3 tbsp butter
1 small onion, finely grated
1 tsp sour cream
½ tsp paprika
½ tsp black pepper
1 tsp salt
Optional: a little hot sauce or Scotch bonnet pepper for heat
Instructions
Preheat oven to 350°F.
Boil macaroni in salted water until just tender. Drain well.
While hot, mix macaroni with butter and 3 cups of cheese.
In a bowl, whisk together evaporated milk, whole milk, eggs, onion, mustard, ketchup, paprika, salt, and pepper.
Pour milk mixture into macaroni and stir well.
Grease a baking dish and pour in macaroni mixture.
Top with remaining cheese.
Bake for 35–45 minutes until golden brown and set in the middle.
