Here is the Greek Salad that I made for dinner. You make make yours a little differently but this is how we like it here... Here I got to try out both the Levos Olive Oil and the Levos Balsamic Vinegar. They were both delicious. Marc loves this salad and he and my brother will love having it leftover for the week. My code is ELISECWL and the website is www.Truegreekimports.com Greek Salad Feiner 5-6 tablespoons olive oil (I used a Greek Olive oil) 2 tablespoons red wine with garlic vinegar 1 tablespoon honey 2 teaspoons Dijon mustard 1-1½ teaspoons Himalayan Sea Salt to taste Freshly grated black pepper 2 tablespoons oregano (I have some Greek Oregano I ordered on Amazon) 1 clove garlic 2 containers of cherry tomatoes cut in half or quarters 1 small red onion, peeled and sliced 1 green bell pepper, thinly sliced 1 red bell pepper 1 English cucumber, peeled and cut in half lengthwise, seeded removed and thinly sliced Kalamata olives, pitted and cut in halve about 15 Castelvetrano olives 10-12 or to taste Feta Cheese a little crumbled for the salad (I had about an ounce leftover from another recipe) For the Topping: ½ 6-ounce block of feta sliced in half through the middle of the cheese A drizzle of olive oil (Here I used a basil olive oil) Ile de France Mini Toasts, or croutons, or toasted baguette slices cut in half (optional) Early in the day cut the onions, peppers, cucumbers, onions, and olives and put in containers or Baggies. In a medium bowl, add the olive oil, red wine vinegar, honey, mustard, salt, pepper, garlic, and oregano. Whisk together gently just to combine it; set aside. When you are ready to serve the salad, add the tomatoes, cucumbers, onions, peppers, and olives. Add a little crumbled feta in Toss to coat with dressing. Taste for seasonings, I added a little more salt and pepper. Then top the middle of the salad with the slab of feta, drizzle with a little olive oil and sprinkle with a little more oregano. Arrange the mini toasts around the sides of the bowl, drizzle with a little olive oil. When you get to the table and are ready to serve it, break apart the slab of feta and serve.
