Ilocos/ Vigan Empanada

Ilocos or Vigan Empanada is an empanada like no other – from the crust to the filling. The super crispy crust is because of the rice flour used. The filling is a mixture of shredded papaya, mongo beans, egg and of course, Vigan chorizo which is garlicky. I have to admit that this recipe will take a bit of practice in enclosing the filling because the crust tears easily. You have to work fast. Fry in hot oil as soon as you finish folding the empanada. A little practice and patience will be helpful. Go for it! I have many recipes to share with you.
