My take on this classic Italian dish!
Recipe:
Meat sauce
400g (1 3/4 cups) beef mince
400g (1 3/4 cups) Italian sausage mince
2 onions
2 Tbsp olive oil
1 tin (400g) chopped tomatoes
1 carton (500ml OR 2 cups) passata
2tsp sugar
Bunch of fresh herbs: parsley, basil & thyme
Salt & pepper
Vegetable layer
1 aubergine
2 pointy red sweet peppers
2 Tbsp olive oil
Salt & pepper
White sauce:
100g (1/2 cup) butter
100g (1/2 cup + 2 Tbsp) plain flour
2 tsp English hot mustard
1/2 tsp ground nutmeg
1 bay leaf
2 pints milk
Splash Worcestershire sauce
Topping
100g (1 cup) grated cheddar
2 balls mozzarella cheese, divided
& of course, the lasagne sheets - 15 sheets
