400 g spelt flour (2-3/4 cups)
100 g bread flour (3/4 cup)
2-1/2 tsps instant yeast
2 tsps sea salt
1 Tbsp honey
350 g water (1-2/3 cups)
1 Tbsp olive oil
2 Tbsps chia seeds (optional)
