I like the flavor of sunflower seeds and pepitas so much, I wanted a way to incorporate them into a bread. Here it is, with the bonus of rehydrated, chopped dates (although other dried fruits would work as well).
Here's the recipe:
300 g bread flour (just over 2 cups)
200 g whole wheat flour (1-1/2 cups)
325 g water (1-1/2 cups)
2 tsps instant yeast
2 tsps sea salt
1/2 cup sunflower/pepita seeds
1/2 cup chopped dates
2 Tbsps canola oil
2 Tbsps honey
NOTE: You can obtain a lighter crumb and possibly higher rise if you decrease the amount of whole wheat flour and increase the amount of bread flour. Just make sure the total amount of flour remains at 500 g (3-1/2 cups).
