Making Easy Lemon Curd!

𝕏 - https://x.com/Ms_LauraAnn Instagram- https://www.instagram.com/laurabakewellyt Quick and Easy Lemon Curd: 5 egg yolks 1 cup Granulated sugar 1/3 cup Fresh Lemon Juice 1/2 cup Butter (unsalted or salted is fine) 1/2 tsp salt, if using unsalted butter zest of the lemons you juiced In a small saucepan add the egg yolks, granulated sugar, lemon juice, butter, and salt (if using unsalted butter). You may also add your lemon zest to the pan like i did in the video, but if you are concerned about your lemon curd being lumpy, make sure to add the lemon zest after you've put it through a mesh sieve. Start to mix together the ingredients then put it over the stove at medium heat, continuing to mix. You want to make sure to get everything incorporated and mixed together so the eggs don't become scrambled. Mix the mixture together over the heat for 5-10 minutes until the curd starts to get thick. With the continued stirring your mixture should be nice and smooth with no lumps. The lemon curd will be ready when it can coat the back of a spoon and is slightly thicker than it was before cooking. Remove from the heat and pour your lemon curd through a sieve, if lumpy. If your curd is smooth you can pour it into a heat safe container. Now is the time you would add the lemon zest if you haven't before. Place a piece of plastic wrap directly on top of the curd, and place into the refrigerator until completely cooled, this may take a few hours. Once cooled you can add your lemon curd to anything you like, cake, cookies, pie, the world is your oyster! Enjoy!
