Mini Fruit Tarts | Small Batch Recipe
Learn how to make a beautiful small batch fruit tart for two with a buttery crust, creamy vanilla pastry cream, and fresh berries on top. It’s an easy, bakery-style dessert that’s perfect for date night or a simple homemade treat without leftovers. 🍓🫐 Print Recipe Here: https://www.yourhomebasedmom.com/wprm_print/163996 Ingredients: Pastry Cream Filling: 2 egg yolks 1/4 cup granulated sugar 1 1/2 Tbsp cornstarch. 1 cup whole milk 2 Tbsp butter, salted 1 tsp vanilla extract Tart Crust: 3/4 cup all purpose flour 1/3 cup powdered sugar 4 Tbsp butter, cold, diced 2 Tbsp beaten egg 1/2 tsp vanilla 1/2 - 1 tsp water, optional Berries, strawberries, raspberries, blueberries for topping Apricot Jelly - for glazing, optional 2 - 5 inch removeable bottom tart pans. https://amzn.to/4lJYtNb Directions: Pastry Cream Filling: In a bowl, combine 2 egg yolks, 1/4 cup sugar and 1 1/2 Tbsp cornstarch. Whisk for a couple minutes until it lightens up in color, set aside. In a medium saucepan, add milk and heat until it just starts to bubble around the edges. Do not allow it to boil. Remove from heat and pour about 1/4 of it into the egg mixture in, whisking continually. Pour the egg mixture back into the remaining milk in pan. Put it back on the heat and stir continuously until the mixture begins to bubble and thicken. Add in 2 Tbsp butter and 1 tsp of vanilla extract. Stir for a minute. Pour into a bowl and cover with plastic wrap to prevent a skin from forming. Place in the fridge to cool. (about 1 hour) Pastry Crust: In a bowl, combine 3/4 cup flour, 1/3 cup powdered sugar and 4 Tbsp cold butter cut into small pieces. Use a fork or pastry blender to cut the butter into the flour mixture so that it resembles small pebbles. Add in 2 Tbsp of beaten egg and 1/2 tsp vanilla. Mix together, use your clean hands to knead in the dry flour. If you can't get all the flour to incorporate, add in 1/2 - 1 tsp water until it comes together. Form into a disk and wrap in plastic wrap and refrigerate for1 hour. Lightly flour your working surface and roll out the dough. Place your 5 inch tart pan on the dough and cut around, leaving a one inch border. (repeat with other pan) Place dough inside the tart pan, pressing it into the bottom and the sides. Run rolling pin over the top to cut off extra dough. Freeze shell for 30 minutes to help prevent shrinkage when baking. Bake crust at 350 degrees F for 15 minutes or until lightly golden brown. Cool tart shell and then add pastry cream. Add fruit to top of cream. Heat up the apricot jelly until it is thin enough to brush over the top of the fruit. Refrigerate until ready to serve.
