Miso Soup
4 cups water
1 tsp dashi powder
half block soft tofu, diced
4 tbsp miso paste
dried seaweed / wakame
chopped spring onion
1. Prepare the miso paste. Scoop 4 tbsp of miso paste into a small bowl.
In a pot, boil about 4 cups of water. Add the dashi powder and stir until dissolved.
2. Add in the diced tofu and dried seaweed. Simmer for a minute.
3. Scoop a few tablespoon of the hot broth into the miso paste. Stir until smooth.
Pour this mixture back into the pot and stir gently until combined. Turn off the heat right away to avoid overcooking the miso. Top with chopped spring onion before serving.
