Peach cobbler
PEACH AND BLUEBERRY COBBLER 1 48 oz frozen peach 1 cup frozen blueberries ¾ cup sugar ¼ cup cornstarch 3 tbsp lemon juice 1 tbsp vanilla extract TOPPING 2 cups all purpose flour 1 cup melted butter 1 tsp baking powder 1 tsp salt ¾ cup sugar 1 ½ cup buttermilk ¼ cup slivered almond ¼ cup raw sugar (optional) In a bowl, add peaches, blueberries, sugar, cornstarch, lemon juice and vanilla extract. Mix everything until cornstarch covers all the fruit. Leave side. In a separate bowl, add flour, salt, sugar and baking powder. Wish everything to combine. Add a couple tablespoons of melted butter to the bottom of the Pyrex. The remaining butter, mix with the flour until it forms a crumble. Once butter is well incorporated, add buttermilk to the flour. Mix until you see a thick batter and there is no flour. Pour the peaches on the butter Pyrex. Drop the batter with an ice cream scoop over the peaches. Cover with the foil and bake at 375 degrees for about 45 minutes then remove the foil and let it bake another 15 minutes or until all golden on top. Serve warm or at room temperature with an ice cream scoop.
