Pecan Upside down Cake Pecan Layer : 1-1/2 cups Pecan Halves 3/4 cup Light Corn Syrup 1/3 cup Dark Brown Sugar 1 stick (8 TBSP) Butter, melted Juice of a Lemon (1 Tablespoon) 1 Teaspoon Vanilla Extract Cake: 2 large Eggs 1 cup Sugar 2 cups All Purpose Flour 1-1/2 Teaspoons Baking Powder 1/2 teaspoon Baking Soda 1/2 teaspoon Salt 1/2 cup Oil 1/2 cup Buttermilk 1 Teaspoon Vanilla Extract (1) In a bowl, mix the corn syrup, brown sugar, butter, lemon juice, vanilla and pecans together. Pour into a buttered 9 x 3" cake pan. Must be deep or your cake will bubble over. Can also use a bundt pan. (2) Using a mixer, cream eggs and sugar together. (3) Whisk the flour, baking powder, baking soda and salt together. (4) In a measuring cup mix the oil, Buttermilk and vanilla together and add to the egg and sugar mixture. Let incorporate together and add the dry ingredients. Mix until incorporated together. (5) Pour in top of the pecan mixture in the cake pan. Bake at 325 degrees F for 50 to 55. (6). Let cool 15 minutes and then turn out onto a cake plate upside down to showcase the toasted pecans.
