When growing up in Ireland I do remember being at home in Dublin and on a special occasion or somebody’s Birthday my Mother bringing in a Black Forest cake and putting it in the middle of the table, Who wants a piece she would shout Everyone did!! So in honor if those memories I tried making one Here is the recipe Chocolate cake First Preheat oven to 350 degrees F spray with a nonstick spray, a 9 inch round cake pan and line the bottom of pan with parchment or wax paper. In a bowl, sift the 1/2 cup of flour, pinch of salt and 1/3 cup unsweetened cocoa powder Fill a wide pot of half filled water on the stove to medium warm In a steel bowl whisk 4 eggs adding granulated sugar. Place over a saucepan of simmering water, and whisk constantly, heat until lukewarm (about 4 minutes Then remove from heat and place in your mixer and Add vanilla extract Mix on high for about 5 minutes Then take off and put into a bowl gradually adding your dry mix on 3 different occasions Mix well with a spatula tuning over and over Add the 50grams of melted butter and mix Pour into your pan and smooth out When ready stick on the middle rack of your oven for about 25 minutes When time to take out stick a tooth pick in the middle and check If ready take out and stick on cooling rack Whipped Cream Frosting: In your mixing bowl place the 2 1/2 cups of whipping cream, 1 tsp vanilla extract, and 3 tbs of granualted sugar and mix well. Cover and chill the bowl and wire whisk in the refrigerator for at least 30 minutes to 1 hour Then take it out of the fridge and place on the mixer and whisk till its nice and thick ** grab a small piping bag and fill with cream for later Cherries: Drain the cherries. Place the your choice cherries in a bowl and toss with a bit of Almond extract, or 2 tablespoons Kirsch Place 1 cup(or close to) of the cherry syrup in a small saucepan, along with the sugar, and heat until sugar has dissolved. Remove from heat, and let cool. Now construct the cake Place your cake on a spinning cake stand and grab your bread knife Cut the cake in the middle moving the cake around When split separate the two cakes and start adding the cherry juice to the cake tops do not put too much on also you can use a brush Start adding your cream followed by cherries to the bottom layer Then add your second layer cake over the creams and cherries on bottom layer Then again add cream and place cherries around Finally grab your piping bag and start piping around your cake with your own design And last shred your cold refrigerated dark chocolate around the cake Stick in the fridge till later..enjoy
