Cook and mash the potato. Mix the potato and flour; stir in egg. 2.) Kneed dough for 2 minutes, roll into a long, thin rope and cut into 1/8-inch pieces. 3.) Add pieces to boiling water and cook for 2 minutes; strain. 4.) Add butter to sauté pan and cook until golden brown; stir in sage. 5.)
