Tomato Basil Soup
This homemade tomato basil soup is not your average can of Campbell’s soup. It is so delicious and nutritious without compromising on any flavor! Ian’s it’s a perfect way to sneak some extra veggies in for your picky eaters! 2 Tbsp. Oil 3-3 closes of garlic (or 1 tsp. Garlic powder) 2-3 large carrots 1 medium onion 2 stalks of celery 8-10 Roma tomatoes 5 cups chicken broth 1 tsp. Salt 1/2 tsp. Pepper 1 Tbsp. Dried basil 1 Tbsp. Dried parsley 1 Tbsp. Lemon juice In a large pot, heat oil at medium. Roughly chop all the vegetables. Add carrots, onion, and celery to pot and sauté for 5-6 minutes. Add garlic (or powder) and sauce for 1 minute. Add chicken broth, salt and pepper and simmer for 10 minutes. Add tomatoes, basil, & parsley and simmer for 20 minutes, until all the vegetables are soft. Place soup in blender and puree. Do not fill blender up completely, as you are working with hot liquid. It will take a couple rounds in the blender. Place soup back in pot on stove. Add lemon juice, stir, and serve. Best served with a grilled cheese sandwich!
