This episode breaks apart from looking at the machine, towards looking at how a computer may interact with it. Although I use Linux, the same concepts of converting MIDI NOTE to CC SPEED information, or adding an automated CC output to engage in some form of external automation are common to other software which are available to both Mac and Windows. Pure Data is cross-platform, and binaries are available for Linux, Mac and Windows. It is also open source, so you can try it/use it free of charge. The learning curve, however, can be a little bit steep. QMidiArp is also an open-souce application, but I haven't found any port to either Mac or Windows. Nevertheless, any DAW can do what it does in this video.
