Wild Berry Fruit Leathers
There's so much to love about fruit leathers. I particularly like that there are no preservatives, added sugars, or dyes in these. They make a great snack for the kids and adults alike. They're also a lot of fun to make, super simple, and easy to do. Keep in mind you can do fruit leathers with many different types of fruits, you can season them with spices like cinnamon or nutmeg, some people even add nuts or seeds (think pumpkin/sunflower etc.). We kept it simple this batch, here's the "rough" recipe we did. Wild Berry Fruit Leathers 5 quarts of fresh berries, washed 3 quarts of thick homemade applesauce 5 Tablespoons of Honey (raw, locally sourced is preferred) 5 Tablespoons of lemon juice Juice the berries (save the seeds to plant if you'd like) Add honey and lemon juice, mix well Add applesauce until mixture is at your preferred thickness Add extra honey, lemon juice, or applesauce to taste. Spread mixture on silicone mats, leather trays, or parchment paper. Dehydrate at 135 for 8-12 hours, until the mixture is smooth (like leather) and not sticky. Roll, cut, and enjoy! Store in air tight or resealable containers, will keep for 2-4 weeks at room temperature or a year in the freezer. Dehydrator timing varies depending on the types of fruits used and the thickness of the spread. I prefer the silicone mats, but parchment paper will do the job too. For a shinier finish stick with silicone mats. Do not use wax paper! Hope you enjoy them and have fun trying different flavor combinations!
